It is a really difficult question, and most details of its mechanism are still unknown.
Iodine anions I(-1) and beta-amylose (one kind of starch) formed iodine-amylose complex, not compound.
Generally, 5 iodine ions reduced (lost) 4 electrons and formed I5(-1) in the coil structure of the amylose molecule.
The iodine-amylose complex absorbs most of visible light. So it looks dark blue.
There is no certain formal formula for this chemical reation.
I try to write down an informal Pig-Head Formula
5I(-1) + (beta)amylose -> I5(-1)-(beta)amylose complex.....
